On the first of August, our homes in the Bahamas become the focal point of one of the most awaited events of the year.

August 1 marks the start of the Bahamian lobster season and that means hosting a porch party to share the feast with family and friends.
The crawfish is actually the spiny lobster, also known locally as crawfish.

The mouth-watering smells of succulent lobster, bean and rice and honeyed plantain permeate our homes on this special day.

There are many ways to serve lobster – grilled with drawn butter and lemon, in a Provençale sauce, battered in panko and deep fried and in luscious salads with fresh pineapple or chopped sun-ripened tomatoes.
