One of the most highly anticipated times of the year – the opening of crawfish season – is here and our Bahamas homes have become the focal point of feasting and entertaining.

The crawfish is actually the spiny lobster, also known as langouste or rock lobster.

In homes throughout the Bahamas, this tasty treat is being served up in all manner of ways – grilled with drawn butter and lemon, battered in panko and deep fired and in luscious salads with fresh pineapple.
