The Wahoo's running in the Bahamas and everything from small Boston Whalers to big cruisers are out trolling for these tasty fish.

If you want a shot at catching Wahoo, November to January are the best months.

These pelagic fish are great on the grill – light and delicate and not fishy. Don't make the mistake of overcooking them.

Smoked, they're a great alternative to salmon. Smoked Wahoo's a delicacy that's served in our homes in the Bahamas to those special people in our lives.

Serve with a little chopped scallion and capers and a wedge of fresh lemon with course black pepper. Delicious!
